Vinificación del Vino Ribeiro Santo Encruzado Blanco: Vendimia manual. Uvas provenientes de un solo viñedo de la variedad Encruzado, de la Quinta do Ribeiro Santo. Despalillado total y prensado. Selección del mosto de uva y posterior enfriamiento y decantación a baja temperatura durante 24h. Fermentación en cubas de inox a una temperatura de alrededor de 15ºC durante 20 días. El 50% del vino termina la fermentación en barricas nuevas de roble francés durante 4 meses.
