Se trata de un brandy elaborado únicamente con orujo de uvas tintas. Una de las raras características de la elaboración de este aguardiente, muy importante desde el punto de vista analítico y aromático, es que la destilación se realiza inmediatamente después de finalizar la fermentación en el molino, obteniendo así un contenido muy bajo de metanol. Otra particularidad es que se vinifica sin despalillar, ya que hemos concluido en experiencias anteriores que la intensidad aromática de un aguardiente de orujo de uva sin despalillar es mucho más delicada. Este aguardiente se destila en un alambique de columna en nuestra propia bodega.
