VITICULTURA Y ENOLOGÍA Las viñas están implantadas en terrazas de dos bardos. Todas las uvas del vino Xisto Roquette & Cazes fueron vendimiadas manualmente y provienen exclusivamente de la subregión del Cima Corgo y de la subregión del Douro Superior. Todas las uvas fueron despalilladas y transferidas a cubas de fermentación de inox de forma troncocónica, donde iniciaron la fermentación alcohólica a temperatura controlada. Durante el proceso de fermentación se utilizó la técnica francesa de “délestage”, que tiene como principal objetivo aumentar la superficie de contacto pelicular en el momento en que el mosto/vino es lixiviado por encima de las masas (sombrero). Como resultado, se obtiene un vino concentrado y complejo, que respeta la elegancia y escapa a la rusticidad.

Tiene un ataque elegante, evolucionando hacia un vino con excelente dimensión y estructura, compuesto por taninos frescos de textura fina. Un vino que se elabora con la tecnología de Burdeos pero que refleja la identidad del Duero. Termina armonioso y con excelente persistencia.
Presenta notas de fruta fresca del bosque bien integradas con elegantes notas de especias y esteva.
