The grapes were received at the winery in 20 Kg boxes, being unloaded directly into the pneumatic press. The musts, properly protected from oxidation, underwent static decantation at low temperature for a period of 24 hours. They were then sent to stainless steel tanks with controlled temperature, where fermentation took place for about 20 days at temperatures not exceeding 16ºC.
