Vinification of the Sidónio de Sousa Special Cuvée Brut Sparkling Wine: the grapes are unloaded into the membrane press, where the free-run juice is extracted without pressing. The must is cooled for 24 hours, decanted, and transferred to a stainless steel tank where fermentation takes place, with temperature control. After fermentation, the wine naturally decants in the tank and is clarified at the end of the year, when it is prepared for bottling the sparkling wine with wild yeasts. The sparkling wine bottles go to the cellar to undergo the second fermentation in the bottle at a controlled temperature and absence of light.
