Vinificação do Vinho Vallado Tinto 2021 de 5 Litros: Cerca de 80% das uvas provêm de vinhas plantadas na década de 1990 e 20% de vinhas velhas com idades entre 60 e 100 anos. As uvas são vinificadas em cubas de aço inoxidável de 5 e 10 toneladas de capacidade, totalmente desengaçadas. O mosto fermenta cerca de uma semana a 23º-25ºC com remontagem automática programada.Estágio: cerca de 70% do vinho estagia durante 16 meses em cubas de aço inoxidável e o restante em barricas de 225 lt de carvalho Francês de 3º e 4º ano.
