Vinificação do Vinho Verde Alvarinho Soalheiro Primeiras Vinhas: As uvas, exclusivamente da casta Alvarinho, são colhidas manualmente em caixas de pequena capacidade e transportadas para a adega num curto espaço de tempo. Após a prensagem, o mosto obtido decanta durante 48 horas, segue-se a fermentação, a temperatura controlada. A fermentação ocorre essencialmente em inox (cerca de 15% do volume total fermenta em cascos usados de carvalho), com manutenção das borras finas até início de Maio, mês em que ocorre o engarrafamento.
