Melgaço, a região mais norte de Portugal, está protegida por um conjunto de serras que permitem um casamento perfeito entre a pluviosidade, a temperatura e o número de horas de sol necessários à melhor maturação das uvas da casta Alvarinho. Esta caraterística climática durante a maturação está muitas vezes associada ao microclima de Monção e Melgaço, que alterna dias quentes com noites frias, permitindo a manutenção de aromas frescos e frutados com uma acidez presente, mas moderada, bem ao estilo que definimos para o Soalheiro.Vinificação do Vinho Verde Alvarinho Soalheiro Magnum: As uvas, exclusivamente da casta Alvarinho, são colhidas manualmente em caixas de pequena capacidade e transportadas para a adega num curto espaço de tempo. Após a prensagem, o mosto obtido decanta durante 48 horas, segue-se a fermentação, a temperatura controlada, usando leveduras pré-seleccionadas para o efeito. O engarrafamento efectua-se após a estabilização do vinho, sendo seguido de um estágio em garrafa. A vinificação do Alvarinho Soalheiro está direccionada para obter um vinho que concentre a qualidade das uvas e permita uma boa evolução após o engarrafamento.
