Vinification of Quinta do Soque Superior Red Wine 2019: the grapes, coming from Quinta do Soque, were transported in plastic food boxes and subjected to rigorous sorting at the entrance to the winery. After total stemming and slight crushing, the must was transferred by gravity to temperature-controlled stainless steel fermentation vats.
