Vinification of Ribeiro Santo Grande Escolha Red Wine 2016: The grapes were completely de-stemmed into small stainless steel mills, where they macerated for 24 hours at low temperature, before starting alcoholic fermentation, with selected yeasts and at a controlled temperature. Alcoholic fermentation lasted around 15 days, with foot treading for a good extraction of color and aromas. After fermentation, it was transferred to new French oak barrels, where it remained for 14 months until bottling and after bottling it remained for a minimum of 6 months in the bottle in a cool cellar.
