Dada a elevada acidez natural, estas vinhas originam vinhos com pH abaixo dos 3.0, sendo possível efectuar a maloláctica que ocorre em Fuders de 1000 litros com mais de 60 anos, provenientes de Mosel. VV representa a incrível leveza e complexidade da Bairrada.
