Vinificação do Menin Dona Beatriz Tinto: Transporte das uvas em caixas de 20 kg, preservação das mesmas em câmara frigorífica para manter a frescura aromática no momento de maceração pré-fermentativo. Triagem em tapete com cacho inteiro, segue-se desengace e seleção bago-a-bago em segundo tapete de escolha. Os bagos só são esmagados no momento de entrada na Cuba, funcionando todo o processo por gravidade. Fermentação em Cuba de INOX e após a maloláctica segue para barricas novas de Carvalho francês de 225L capacidade selecionadas criteriosamente. O estágio em barrica decorreu durante 20 meses. Após o engarrafamento o vinho encontra-se em estágio por cerca de 18 meses.Predominância de Tinta Amarela, Touriga Franca, Tinta da Barca entre as 54 castas.
