Vinificação do Vinho Ribeiro Santo Encruzado e Touriga Nacional Tinto: Uvas de Encruzado vindimadas separadamente das de Touriga Nacional – todo o processo foi feito de forma individual. O blend determina a percentagem de cada uma das castas – 15% de Encruzado e 85% de Touriga Nacional. Vindima manual. Desengace total. Maceração prolongada em depósito de inox. Fermentação alcoólica com leveduras indígenas sob temperatura controlada por 20 dias. Pisa pé. Decantação para barricas novas de carvalho francês 225L por 12 meses. Após envelhecimento procedeu-se o blend.
