Após desengaçadas e prensadas, o mosto é transferido para uma cuba de inox, onde se mantém a uma temperatura de 8°C durante 48 horas para a decantação. A fermentação alcoólica começa na cuba e continua em barricas de carvalho francês, a 15°C, por 30 dias.Envelhecimento: 9 meses de estágio em barricas de carvalho francês, com bâtonnage nas borras finas, conferindo uma textura cremosa e uma complexidade aromática ímpar.
