Vinification of Vallado Red Wine 2021 18 Liters: Around 80% of the grapes come from vineyards planted in the 1990s and 20% from old vines aged between 60 and 100 years. The grapes are vinified in stainless steel vats of 5 and 10 tons capacity, completely de-stemmed. The must ferments for around a week at 23º-25ºC with programmed automatic pumping over. Aging: around 70% of the wine ages for 16 months in stainless steel vats and the remainder in 225 liter French oak barrels from the 3rd and 4th year.
Good structure, fleshy with round tannins. Lingering finish
