Vinificação do Vinho Quinta do Cardo Vinha do Castelo Tinta Roriz Tinto: Feito de uvas da casta Tinta Roriz, plantada na vinha do Castelo, a uma altitude de 780 mts, parcela esta que sofre grandes amplitudes térmicas, transmitindo às uvas carácter e um estilo muito próprio. As uvas foram colhidas e seleccionadas à mão, transportadas para a adega onde foram desengaçadas e pisadas a pé. Fermentou durante 8 dias a temperatura controlada de 26ºC. Estagiou durante 22 meses em barricas de carvalho francês.
