Moscatel Favaios 2007Em 2007, o clima teve um impacto significativo nas uvas do planalto de Favaios. O envelhecimento em madeira contribuiu para intensificar e dar maior complexidade ao perfil aromático do vinho. É um belo exemplo dos melhores Moscatéis que se fazem no planalto de Favaios.Apo´s selec¸a~o cuidada das melhores uvas de Favaios, fez-se a maceração e fermentação no método tradicional da regia~o. A fermentac¸a~o alcoo´lica e´ muito curta. Logo após a subida da manta, procede-se a` sangria da maior parte do mosto e aplicac¸a~o de aguardente. Uma pequena parte do mosto continua a fermentar e a macerar com as peli´culas, durante mais alguns dias, e, so´ mais tarde, se procede a` aguardentac¸a~o desse mosto, muito rico aromaticamente. O primeiro e segundo mostos aguardentados sa~o depois misturados e armazenados em balseiros de madeira velha, nos quais o vinho envelhece lentamente, aprimorando o seu bouquet, ao longo dos anos.
