Vinification du Vin Monte das Servas Escolha Rouge de 5 Litres : Après réception par cépage, les raisins sont égrappés et foulés, suivis d'une macération pré-fermentative. La fermentation a lieu dans des cuves en inox avec contrôle de température. Élevage : Une fois la fermentation malolactique terminée, le vin a été élevé 6 mois dans des cuves en inox. Après mise en bouteille, il a reposé en bouteille pendant 2 mois dans notre cave. Pour préserver toutes ses qualités, ce vin n'a pas été stabilisé, pouvant naturellement créer un dépôt.
