Portweinherstellung KOPKE Ernte 1979: Die Trauben werden zum optimalen Zeitpunkt von Hand geerntet, entrappt, zerkleinert und nach einem Verfahren vinifiziert, das auf einer sorgfältigen Mazeration mit Extraktion von Farbe, Tanninen und Aromen aus den Schalen basiert, ergänzt durch permanente Mazeration Umpumpen während der Gärung. Dies geschieht in Mühlen bei einer kontrollierten Temperatur zwischen 28 und 30 °C, bis der gewünschte Baumé-Grad erreicht ist. In dieser Phase wird Weinbrand (Nutzen) hinzugefügt, wodurch ein Likörwein entsteht. Hochwertiger Wein aus einer einzigen Ernte. Er reift in Holzfässern für unterschiedliche Zeiträume, niemals weniger als 7 Jahre, und wird dann je nach Marktanforderung in Flaschen abgefüllt.
