Dabei handelt es sich um einen Brandy, der ausschließlich aus dem Trester roter Trauben hergestellt wird. Eine der seltenen Besonderheiten bei der Herstellung dieser Spirituose, die unter analytischen und aromatischen Aspekten sehr wichtig ist, besteht darin, dass die Destillation unmittelbar nach Abschluss der Gärung in der Mühle erfolgt und so ein sehr geringer Methanolgehalt erzielt wird. Eine weitere Besonderheit besteht darin, dass die Weinbereitung ohne Entfernen der Stiele erfolgt, da wir aus früheren Erfahrungen herausgefunden haben, dass die aromatische Intensität eines Tresterbrandes aus nicht entrappten Trauben deutlich delikater ist. Dieser Geist wird in einer Kolonnendestille in unserem eigenen Keller destilliert.
