Vinifikation des Branco Cottas Reserva 2017: Die Trauben werden manuell geerntet und in 25-kg-Kisten transportiert, ausgewählt, entrappt und am Eingang des Weinguts gepresst. Nach der statischen Dekantierung des Mostes bei niedriger Temperatur für einen Zeitraum von ca. 24 Stunden wird der geklärte Most in Edelstahltanks geleitet, wo der Beginn und der erste Teil der Gärung stattfinden. Anschließend wird er in französische Eichenfässer umgefüllt, wo der Most geklärt wird Der Gärungsprozess endet mit der alkoholischen Gärung und einer Battonnagezeit von etwa 7 Monaten auf der gesamten Hefe.
