Vinifikation des Aguardente Adega Velha 12 Jahre XO: Die aufgrund ihres hohen Säuregehalts und niedrigen Zuckergehalts ausgewählten Trauben sind der Ursprung eines leichten und ausgewogenen Weins. Anschließend wird der Wein zwei langsamen und sorgfältigen Destillationen in einem Charentais-Destillierapparat unterzogen, der aus der Cognac-Region in Frankreich stammt. Nach dem Destillationsprozess wird der Aguardente in französischen Eichenfässern aus der Limousin-Region gereift, in denen sich die letzte Charge befindet ein durchschnittliches Alter von 12 Jahren.
