Vinifizierung des Weins Quinta do Cardo Vinha do Castelo Tinta Roriz Rot: Hergestellt aus Trauben der Sorte Tinta Roriz, die im Weinberg des Schlosses auf einer Höhe von 780 m gepflanzt sind, einem Grundstück, das großen Temperaturschwankungen ausgesetzt ist, was den Trauben Charakter und einen ganz eigenen Stil verleiht. Die Trauben wurden von Hand geerntet und ausgewählt, in das Weingut transportiert, wo sie entrappt und zu Fuß gepresst wurden. Sie fermentierten 8 Tage lang bei kontrollierter Temperatur von 26ºC. Sie reiften 22 Monate in Fässern aus französischer Eiche.
