Vinifikation des Bairrada Filipa Pato Nossa Tinto 2021: Von seinen Ursprüngen, vom Weinberg bis zur Flasche, besteht die Philosophie darin, einen Wein zu schaffen, der den Ausdruck der Beere respektiert, ohne Make-up, ohne Künstlichkeit. Beibehaltung althergebrachter Weinherstellungstechniken mit minimalem Eingriff. Nossa-Rot stammt aus alten Weinbergen in mehreren auf der Karte aufgeführten Gebieten. Der Weinbau erfolgt unter Berücksichtigung der traditionellen Techniken der Region und unter Beibehaltung der natürlichen Vegetation ohne den Einsatz von Herbiziden. Die Weinbereitung erfolgt in einer von der Römerzeit inspirierten Eichenpresse. Er ruht 18 Monate lang in 500-Liter-Fässern aus französischer Eiche, 80 % gebraucht und 20 % neu. Im Jahr 2011 wurden 2500 Flaschen und 110 Magnums abgefüllt. Alle werden von Hand mit natürlichem Wachs versiegelt, um eine gute Reifung im Keller zu gewährleisten.
