Es werden portugiesische Eichenfässer verwendet, die mit Portwein ausgekleidet sind. Durch diesen Prozess erwirbt der Aguardente bestimmte Arten von Tanninen und phenolischen Substanzen, die zum Bouquet und zum charakteristischen Geschmack des „Aguardente Velhíssima“ beitragen.
