Vinifizierung des Sidónio de Sousa Vinho D Autor Tinto: Zerkleinerung ohne Entrappung mit Abkühlung der Trauben im Keller in kleinen offenen Lagares, wo die pelliculare Mazeration beginnt und anschließend die Fermentation, ohne Zugabe von Enzymen und Hefen. Die Trauben werden manuell mit Holzstöcken getreten, um eine größere Extraktion der weinlichen Eigenschaften der Rebsorte Baga zu erreichen. Reifung: Nach der Fermentation in kleinen offenen Lagares wird der Wein in Zementtanks überführt, wo er bis Dezember ruht, zu diesem Zeitpunkt wird er filtriert und in 4.000 Liter große, mit Wein ausgekleidete Eichenfässer umgefüllt, wo er 30 Monate reift. Nach der Abfüllung reifte er 4 Jahre in der Flasche. Es ist ein Wein, der sich durch seine Persistenz und die Fähigkeit zur Flaschenreifung von weiteren 10 bis 15 Jahren auszeichnet.
