Das Jahr 2000 war ein ausgezeichnetes Jahr für Trauben aus der Favaios-Hochebene. Die Natur hat uns mit einem ausgeglichenen Jahr belohnt, mit milden Temperaturen und Regen zur richtigen Zeit, was es uns ermöglichte, Trauben von großer Qualität, Harmonie und voller Aromen der Sorte zu erzeugen. Nach sorgfältiger Auswahl der besten Favaios-Trauben wurden sie mazeriert und fermentiert, wie es in der Region traditionell ist. Die alkoholische Gärung dauert sehr kurz, und kurz nachdem der Mantel aufgegangen ist, wird der größte Teil des Mosts entlüftet und der Brandy aufgetragen. Ein kleiner Teil des Mostes gärt und mazeriert noch einige Tage mit den Schalen, erst später muss dieser sehr aromatische Most ausgebaut werden. Der erste und der zweite Likörmost werden dann gemischt und in alten Holzfässern gelagert, wo der Wein über 20 Jahre hinweg langsam reift. Die lange Reifezeit im Holz trägt auch dazu bei, das aromatische Profil des Weins zu entwickeln und weiter zu verfeinern als Ihre Geschmacksknospen. Es ist ein wunderschönes Beispiel für den besten Moscatel, der auf dem Favaios-Plateau hergestellt wird. Von dieser Ernte wurden nur 3200 Liter für diese LIMITIERTE EDITION ausgewählt
